Easy Plant-Based Vegan Recipe: Avocado Cucumber Cauliflower Rice Sushi Wraps

One thing I do miss is seafood, especially seafood-based sushi. This recipe was inspired by poke bowls and since I ran out of nori wraps I used the Kirkland snack-sized seaweed nori snack. This is a great recipe to enjoy on hotter days it is very filling without being very calorie-laden. This recipe is super easy and also low carb!

Ingredients:

  • Seaweed snack nori (I picked some up at my local Costco but Amazon to the rescue!)

  • At least two cups of cauliflower rice

  • One tablespoon of sushi vinegar

  • Two to three Persian cucumbers or a quarter of an English cucumber

  • One medium avocado

  • Two tablespoons of soy sauce or tamari sauce

  • One teaspoon of a freshly squeezed lemon juice

  • Half a teaspoon of roasted sesame seeds

  • Pinch of salt

Cooking Directions:

  1. Cook the cauliflower rice until tender I used a rice cooker

Preparation:

  1. Add your cauliflower rice to a bowl

  2. Take the avocado and dice into a bowl

  3. Pour the teaspoon of lemon juice over the avocado

  4. Dice the cucumber and add it to the bowl

  5. Add the soy sauce or tamari sauce and sushi vinegar lightly mix

  6. Sprinkle the sesame seeds and salt

  7. Spoon the filling into your seaweed snack nori and enjoy!
