Easy Plant-Based Vegan Recipe: Cabbage Soup



I was inspired by this Cabbage Soup Diet Video to make a plant-based vegan-friendly version. I am honestly not tempted to do the cabbage soup diet, sounds like not a fun time but I do like the idea of having some tasty inexpensive soup on hand for lunch or dinner during the week. The following is my modified version! Note: Stock photo because the Internet is super judgmental.


Ingredients:

  • One bulb of garlic

  • One medium to large bulb of onion

  • Two bell peppers (color does not matter)

  • One stalk of celery

  • One head of Napa cabbage

  • One head of broccoli

  • Two oz of onion soup mix

  • Two cans of tomato sauce

  • 32 oz container of vegetable stock

  • Two tablespoons of grapeseed oil

Preparation:

  1. Dice the onion and garlic

  2. Dice the bell peppers and celery

  3. Chop the Napa cabbage and broccoli

Cooking Directions:

  1. Put two tablespoons of grapeseed oil in a large stockpot and heat on medium.

  2. Take the diced garlic and onion and cook till onion and garlic is translucent and light brown.

  3. Add the soup stock, onion soup mix, and tomato sauce.

  4. Add the diced bell peppers and celery

  5. Add the chopped Napa cabbage and broccoli

  6. Cook on medium to all the vegetables are tender

  7. Serve in a soup bowl and enjoy!
